The global demand for meat is rising continuously. Neither ecological problems nor criticism of meat consumption and its consequences are having any impact on global consumption. For some time now, Mercosur, comprising Argentina, Brazil and Paraguay, has been one of the world's leading exporters of beef. However, the highest growth rates are no longer in trade in beef, but in poultry meat. The project comparatively addresses local changes in the distribution and consumption of chicken meat. This includes critical discussions around the consumption of industrially produced chicken, taking into account contemporary discourses on nutrition, health and wealth. The study links to current debates on the history of consumption and nutrition in the globalized world, on urban inequality structures, thus combining political-economic analyses with a cultural-historical and ethnographic approach.
